Classification of the walnut kernel by size. Why sort the kernel?

After cracking and disassembling the walnut, it is necessary to calibrate the kernel in size. The Extra Class may contain quarters and halves, but their number should not exceed 10%. The kernels of the first grade allow the content of parts with a size of 1/8 not more than 15% by weight.

Halves. This category includes walnuts, 80% of which are halves, as well as a kernel the size of three-quarters of a halves, the rest of the mass consists of quarters.

Quarters. These are pieces of the kernel that have not been sifted into a sieve with round holes and a diameter of 11 mm.

Eights, small pieces of kernel. This discharge of the kernel consists of pieces that have passed through a sieve with round holes and a diameter of 11 mm, but at the same time not sifted into a sieve with a diameter of 3 mm. Eights are usually divided into two sizes: 3-6 mm and 7-10 mm. These pieces of walnut are used in confectionery and baking.

Crumbs. These are tiny pieces of the walnut kernel, the size of which does not exceed 3 mm. The crumb is used in the confectionery craft, namely: it is added to the dough, ice cream, cakes, pastries are sprinkled, and walnut fillers are prepared from the crumb.

The sorted walnut kernel has a higher cost compared to the mix, so it is beneficial for producers to include sorting in the processing process. In addition, the kernel sorted by size is more in demand in the sale and export of the kernel.

The process of manually sorting the walnut kernel by size is very labor intensive and time consuming. To speed up and automate this operation, special equipment was created. Kernel sizing machines are made on a vibration basis for the most gentle treatment of fragile kernels. Thus, vibrating screens for sorting preserve the quality and integrity of the kernel as much as possible.
